Introduction
The cellar work module introduces the basics of cellar work encompassing cellar maintenance, security, delivery procedures and stock control.  This also includes keg and cask procedures, including valve changing, connections and line cleaning as well as storage for wines, bottled spirits and liqueurs.   Areas of health and safety relevant to cellar work are also covered along with manual handling and fire and security.

Introduction to the Cellar
A brief introduction explaining about the cellar and why it is needed

Cellar Safety
This covers COSSH, HACCP, manual handling, safe storage of deliveries.

Stock Control
Rotation of stock, temperature, accountability, integrity of stock.

Cask and Keg Beer
Cask, Keg, Valve changing and connections, dispense line cleaning

Storage
Regulations, bottles and cans, wines, bottled spirits and liquors, temperature.

After each session, a hand out is provided for students to keep in their portfolio for future reference. At the end of the course a certificate will be awarded on successfully completing each module taken.
