Silver Service
This basic course is ideal for all levels of students. We start with a small interview to see which module best suits your requirements, with this information we custom build a training program to suit your needs.

Included is how to serve the following menu types; Table d’Hote, A La Carte, full breakfast, high tea and afternoon tea, all using silver service equipment and serving with a spoon and fork. We also show the correct way to serve soup and fish as well as everyday courses. Not forgetting the correct way to clear a table, change a tablecloth and fold serviettes.

Introduction
We explain why we use silver service. How it benefits the customer, the business and the dining room staff.

Table Preparation
We will teach you the correct way to clean a table, lay a tablecloth, lay a cover and the use of other equipment used in the dining room.

Types of Covers/Settings
How to set up each place setting from breakfast to a five course meal, Table d’Hote to A La Carte and high tea.

Serving
How to hold and use a spoon and fork. Serving from a tureen, a silver salver and a soup tureen.  Clearing with hands and a tray. How to carry cutlery. Coffee service, wine and drinks service at the table.

Clearing
How to clear plates from a table, de-crumb a table and the safe system of clearing glasses by hand.

Maintain Cutlery & Serving Equipment
How to clean silver, cutlery, pots, salvers and tureens. The use of cleaning solvents including COSSH.

After each session, a hand out is provided for students to keep in their portfolio for future reference. At the end of the course a certificate will be awarded on successfully completing each module taken.
